With Ciel’s arrival in 2024, The Hills will gain a luxurious new rooftop restaurant. Chef Joshua Mason, the brains behind acclaimed French restaurant Quoi Dining in Baulkam Hills, will take the helm at this lavish new opening in Sydney’s north west.
Ciel, which means “sky” in French, will occupy half of the seventh floor in Infinity Park, a new development that will have 287 apartments by the time it is completed in 2025. The dining room offers views of the neighboring Castle Hill Country Club and the Sydney skyline in the distance.
Mason describes the soon-to-open restaurant as: “A wood-fire inspired dining experience that celebrates the south of France and the easy finesse of Mediterranean cuisine.”
“Ciel draws inspiration from my Sicilian heritage and celebrates a seafood menu. There will be an ice fountain at the front of the restaurant with a selection of fresh oysters, lobsters, shellfish and Australian fish.”
A custom grill built in Barcelona was brought in to ensure the seafood had exactly the wood-fired touch Mason envisioned, and the green stone bar was imported from Argentina.
Ciel will bolster the Hills District’s culinary offerings, joining Mason’s Quoi Dining and Italian restaurant Sarino’s at Mullane’s Hotel, a neighborhood known more for casual dining and takeout favorites like Frango, El Jannah and Good Fella Coffee.
